Ginger Sugar Cookies
Combine the following wet ingredients first:
· 3 sticks of butter
· ½ c. molasses (Briar Rabbit)
· 2 c. sugar
· 2 eggs beaten well
Next combine the dry ingredients together:
· 4 c. flour
· 4 tsp. baking soda
· 2 tsp. cinnamon
· 1 tsp. cloves
Add the dry mixture, one cup at time to the wet mixture. Refrigerate the dough for 2 hours in saran wrap. Roll into balls and then roll in sugar. Add ¼ cherry on and then bake @ 350 for 8-10 minutes. I'm blanking on how many cookies this makes...but it has to be a lot!
A festive variation is to create trees. Using a small, flat-bottomed glass, smash the sugared balls and then add the cherry to one side. Using a powder sugar and milk icing, pipe a zigzag down from the cherry.
